Here’s the Plan:
We start the week by making a big batch of tender, flavorful chuck roast on Sunday, then incorporate it into fresh, delicious meals throughout the week. Below, I’m sharing a day-by-day guide to how we made it work for our family — but feel free to tweak it to suit your own tastes! This Week’s Flexible Dinner Menu
- Sunday: Hawaiian Chicken Tacos with Jalapeño Ranch + Cabbage Slaw(Double batch!) ➤ See the recipe
- Monday: BBQ Chuck Roast over Roasted Sweet Potatoes served with leftover slaw – easy and nourishing

- Thursday: Leftover Hawaiian Chicken Tacos – crisped up under the broiler and just as good the second time.
- Friday: Clean-out-the-fridge night – a stress-free evening to enjoy any remaining favorite leftovers.

Sunday Meal Prep: The Foundation for the Week -Slow-Braised Chuck Roast
This slow-cooked chuck roast is the backbone of our weeknight meals. It’s simple, deeply flavorful, and versatile enough to use in tacos, gyros, pasta sauce, and more. I like to use a few simple flavor boosters to keep the taste neutral enough so the beef works well in different recipes throughout the week. After cooking, let the meat cool slightly, then shred it with forks and store it in a container with some of the cooking liquid to keep it moist all week.

Sunday Meal Plan: Hawaiian Chicken Tacos
While the chuck roast is in the oven, I make a double batch of Hawaiian Chicken Tacos – a family favorite! This recipe is simple but packed with flavor. This jalapeño ranch slaw is fresh, flavorful, and super versatile! Feel free to toss in any extra produce you have on hand — I added some corn to mine. Store any leftover slaw in an airtight container — it keeps well and adds a fresh crunch to lunches or tacos later in the week


Monday Meal Plan: BBQ Chuck Roast over Roasted Sweet Potatoes
We’re starting the week with a comforting, flavor-packed dinner that’s both hearty and easy to throw together. It’s a great way to use the chuck roast and jalapeño ranch slaw prepped on Sunday — all the flavor, none of the extra work.

Midweek calls for something cozy and satisfying — and this Pasta with Hearty Chuck Roast Ragu delivers. It’s a warm, comforting dish that makes the most of your Sunday chuck roast while feeling like a totally new meal.
This quick ragu is rustic, rich, and packed with flavor, all simmered together in just about 30 minutes. It’s a great way to sneak in some veggies, and even picky eaters usually go back for seconds!
