Classic Hamburger Helper (From Scratch)
This classic hamburger helper from scratch is a creamy, cheesy one pot pasta made with ground beef and simple pantry staples. A super easy one pot 30 minute meal!

This version has rich beef flavor, a little smokiness from paprika, and a creamy cheesy finish that kids and adults both love. It tastes nostalgic but feels homemade and nourishing at the same time. Main Ingredients & Swaps
- Ground Beef – 85 to 90% lean works best so it is rich without being greasy. Swap with ground turkey, chicken, or cooked lentils for a meatless option.
- Onion and Garlic – These build the flavor base and make everything taste homemade. Fresh is best but powders work in a pinch.
- Chicken Stock – adds lots of flavor, protein and nutrients to the pasta and forms the savory creamy sauce as it reduces. Substitute beef or vegetable broth if that’s all you have.
- Crushed Roasted Tomatoes or Marinara – Canned crushed tomatoes or jarred marinara both work well.
- Pasta – Short shapes like shells, elbows, or rotini work best. You can swap with whole wheat, chickpea, or gluten free pasta, just adjust cook time.
- Shredded Cheese – Makes the sauce thick and melty. A mix of cheddar and mozzarella or Monterey Jack gives the best texture. I would not recommend using a dairy free cheese here as those tend to not melt as well.
- Sour Cream – Adds tang and extra creaminess at the end. Greek yogurt is an easy high protein swap if that is your jam.
How I Make It
Start by browning the ground beef in a large pot or deep skillet over medium heat, then drain any excess grease if needed.
Add the diced onion, spices, and salt, and cook until the onion softens and everything smells fragrant. Stir in the garlic and cook for about a minute more.
Then pour in the chicken stock and crushed tomatoes, bring to a boil, then add the pasta. Cover and let it cook until the pasta is tender, stirring once or twice so nothing sticks to the bottom.
Turn off the heat and stir in the shredded cheese until fully melted and creamy. Fold in the sour cream, taste, and adjust seasoning if needed, then serve warm.

- Note 1: Removing the beef from the pan keep the beef a little crispy. However if you don’t want to take this extra step, you can leave the beef in the pan and move on with the rest of the recipe.
- Use shells, elbows, or rotini since those tend to hold the sauce the best.
- Greek yogurt can replace sour cream and adds a little extra protein
- Add spinach or peas at the end for extra veggies and color
- Leftovers can be reheated with a splash of milk or broth to loosen the sauce.
- One serving, based on 6 servings total, has about 620 calories, 34 grams of protein, and roughly 3 to 4 grams of fiber.
Method
- Brown the ground beef in a large pot or deep skillet over medium heat with a 1/2 tsp salt. Allow the ground beef to cook until it has caramelized and you see some crispy brown bits. Remove beef from pot and place into a bowl. (see note 1)
- To the pot, add onion and cook for a few minutes. Then add the smoked paprika, ancho chili powder, and salt. Stir in garlic and cook 1 minute.
- Add in the distilled white vinegar, worcestershire, the chicken stock, and crushed tomatoes. Bring to a boil.
- Add pasta, cover, and cook about 12 minutes or according to package directions, stirring once or twice.
- Turn off heat. Stir in shredded cheese until melted, then fold in sour cream until creamy. This thickens up more as it cools.
- Taste, adjust seasoning if needed, and serve warm.
Family loved it, it was a total hit! I used a can of diced tomatoes because I don’t have crushed tomatoes and it does basically the same thing, so if that helps someone great.
