Simple Sunday Spaghetti with Italian Sausage
A simple and yet super flavorful pasta dish that will make your family rave about your cooking abilities! Made with italian sausage, sauteed carrots and onions, a pop of sherry, a bit of cream, parmesan, and a jar of marinara. Oh my this is good. Dinner is served!

This checks all the boxes. This dinner is truly so easy and fun to make. You only need a few key ingredients and you’ll end up with the most comforting and flavorful pasta dish.
Ingredients:
- Italian Sausage
- Spaghetti Pasta
- Carrots
- Onions
- Sherry Cooking Wine – this adds a lovely pop of flavor. You can also use white wine vinegar. This can be tricky to find, so I buy my Sherry from Thrive Market. P.S. How I Make It
First cook your spaghetti in salted water. I like to do a small handful of kosher salt so that water actually tastes salty. Don’t worry, you won’t actually end up eating all of this salt. Cook your spaghetti until al dente, but remember to save 1 cup of this starchy, salty pasta water.
Take your 4 sausage links, remove the casing, and break it up into crumbles. Cook these up until fully cooked and caramelized on the edges in a heavy dutch oven pot. I love my Staub heavy duty dutch oven pot for this. Remove the meat and set aside.

Next saute your your diced carrots and onions right on the pork fat until the veggies are softened and starting to deepen in color. 5-8 minutes. Deglaze the pot with that sherry cooking wine, oh my it’s a good combo.
Add the meat back in, then add in your jar of mariana (I prefer Rao’s for this!) Next add in your pasta, 1/2 cup of cream, 1/2 cup finely grated parmesan, and pasta water to loosen. Stir, stir, stir until the sauce has thickened and coats the pasta. Add more pasta water if it looks too thick. Serve immediately!

Simple Sunday Spaghetti with Italian Sausage

- First, boil your pasta in the salted pasta water until al dente and reserve 1 cup of pasta water for later.
- Next, cook your italian sausage crumbles in a heavy dutch oven pot until fully cooked and slightly browned. Remove the meat from the pan set aside.
- Cook your diced carrots and onions in the pork fat and a bit of salt until softened, fragrant, and deepened in color. 5-8 minutes. Deglaze the pot with 2-3 tbsp sherry cooking wine. This adds a delicious pop of flavor.
- Add the meat back in, along with the jar of marinara, and pasta. Pour the heavy cream over top, along with the parmesan, and stir rapidly until the sauce coats the pasta. Loosen this sauce with pasta water as needed until it reaches the desired consistency. It will thicken as it cools so add a little more then you think you need. I usually use about 1/2 cup of this salty water.
