Creamy Peanut Lime Chicken Noodle Bowls
Creamy peanut lime chicken noodle bowls with coconut milk, fresh lime, and simple ingredients. A flavorful, better-than-takeout meal made at home in 30 minutes!

This is one of those meals that feels a little more fun and different, but still comes together pretty easily once you have everything going. The sauce is the star here. It’s creamy, a little tangy, a little savory, and just rich enough to make the whole bowl feel really satisfying.
I will say, if you make the sauce ahead of time, this becomes a true low-effort meal. Otherwise, you’re juggling a few things at once. Still very doable, just something to keep in mind.
Once everything is combined, though, it’s one of those meals you’ll want to keep on repeat.
Why I Love this Recipe
The sauce is incredibly flavorful and works for more than just this recipe. When I make it, I always make sure to make a big batch so I can use it as a dressing or dip later on in the week. It’s a great balance of creamy, fresh, and savory with the lime, peanut butter, and coconut milk.
Great thing about this recipe is that its flexible, you can load it up with whatever fresh toppings you have on hand. It feels like takeout, but made at home with simple ingredients.
Main Ingredients & Swaps
- Coconut milk – use a full fat coconut milk for the best creamy texture
- Peanut butter – almond butter works if needed
- Red curry paste – adjust how much you want based on heat preference
- Fish sauce – this adds so much depth to the sauce, I would not recommend leaving this one out
- Rice noodles – rice noodles are sturdy and hold this sauce so well
- Chicken – can swap for shrimp or tofu if preferred
- Fresh lime – key for balancing the richness, and as always fresh lime is best
How I Make It
Start by making the sauce. Add the coconut milk, peanut butter, red curry paste, brown sugar, soy sauce, fish sauce, rice vinegar, ginger, and garlic to a small saucepan. Warm everything over medium-low heat, stirring until smooth.
Once it’s warmed through, add the fresh lime juice. Taste and adjust depending on what you like. A little more lime brightens everything, more sugar softens it, and more fish sauce deepens the flavor.
If the sauce feels too thick, thin it out with a little hot water, broth, or reserved noodle water until it’s pourable.

Cook your noodles according to package instructions and set aside, reserving some of the cooking water.
For the chicken, slice it thin, marinate it for 30 minutes or so in some of the peanut sauce, and cook in a skillet with a little oil until golden and cooked through. It’s best if you cook it undisturbed for a few minutes per side to create a nice crust. SO good.

Prep your toppings. Slice red peppers, chop cilantro, and cut or ribbon the cucumber.

To assemble, add noodles to a bowl and toss with the sauce. Top with the cooked chicken and fresh veggies. Finish with extra sauce, a squeeze of lime, and a sprinkle of salt if needed.

Method
- Add all sauce ingredients except lime juice to a saucepan. Heat over medium-low, whisking until smooth.
- Stir in lime juice. Taste and adjust as needed.
- Butterfly the chicken breasts in half, then cut each piece in half. You should now have 8 pieces. Place chicken in a bowl with about 1/3 cup of the peanut sauce and let it sit and marinate while you prep your veggies and boil your water.
- Cook noodles according to package instructions. Reserve some noodle water before draining.
- Heat oil in a skillet and cook sliced chicken on medium high heat for 3-4 minutes per side until golden and cooked through.
- Toss noodles with sauce. Add more sauce as needed.
- Assemble bowls with noodles, chicken, and fresh toppings.
- Finish with extra sauce, lime juice, and salt to taste.
