Crispy Beef Burger Bowls with Special Sauce
These crispy beef burger bowls have all the flavors of a classic burger and fries, savory beef, fresh veggies, golden fries, and creamy special sauce, all in one easy, satisfying bowl.

I’m still dreaming about this burger bowl ever since making it. I was looking for fast/easy ground beef recipes, and my son requested burgers. I didn’t have any buns, but had a pack of beef, a few potatoes, and all the usual burger toppings, so instead of shaping patties and dealing with buns, I turned everything into bowls. Honestly, it might be my favorite way to do burgers now.
You still get all the good stuff. Savory crispy beef, tangy special sauce, salty fries, crunchy lettuce, juicy tomatoes. It tastes like a classic burger and fries but feels lighter, simpler, and way easier to throw together. Everyone can build their own bowl, which keeps dinner relaxed and kid friendly.
It is simple, filling, and great for leftovers too. I recommend doubling the beef and sauce so you have easy lunches the next day.
Main Ingredients and Swaps
- Ground Beef – Cooked hot so it gets crispy, caramelized edges for big burger flavor without shaping patties. Swap with ground turkey or chicken for a lighter option.
- Burger Seasoning – Onion powder, garlic powder, paprika, salt, and a touch of brown sugar create that classic savory sweet burger taste. Use your favorite seasoning blend or skip the sugar if you prefer.
- Potatoes – Turn into golden, crispy fries in the air fryer and make the bowls extra satisfying. Sweet potatoes, Yukon golds, or russets all work. Frozen fries or oven roasted potatoes are easy swaps.
- Lettuce and Tomatoes – Fresh crunch balances the warm beef and fries. Romaine or iceberg hold up best. Add cucumbers or any veggies you have on hand.
- Special Sauce – You definitely don’t want to skip on the the sauce, this is what ties the whole dish together.
- Dill Pickles – We use some of the brine and chopped up pickles in the sauce and it really takes it over the top.

How I Make It
Start by cutting your potatoes into thin fries, tossing them with oil and salt, and popping them into the air fryer until golden and crispy. While the fries cook, mix together the quick special sauce and let it chill in the fridge so the flavors meld.

Next, season the ground beef and cook it in a hot skillet, breaking it up as it browns. Let some pieces sit undisturbed so they develop those chunky crispy, caramelized edges that give the bowls that classic burger flavor.

To assemble, layer shredded lettuce and tomatoes in each bowl, spoon over the crispy beef, add a handful of hot fries, and drizzle generously with the special sauce. Serve right away while everything is warm and fresh.

- Swap beef for ground turkey or ground chicken if preferred.
- Frozen fries or oven roasted potatoes work too.
- Store components separately for easy meal prep and reheating.
- Based on the full recipe divided into 6 servings, each bowl is approximately 600 calories, 34 grams of protein, and about 5 grams of fiber.
Method
- Prep the potatoes by rinsing and scrubbing the potatoes, then peel if desired. Slice into thin fries, about ¼ inch thick, and pat dry with a towel so they crisp better.
- Toss the cut potatoes with avocado oil and salt. For extra crispiness, sprinkle with tapioca starch and toss again to coat evenly.
- Spread the fries in a single layer in the air fryer basket and cook at 385°F for 15 to 20 minutes, shaking halfway through, until golden and crispy. Work in batches if needed.
- Make the special sauce by finely chopping the pickles, then stir together mayonnaise, ketchup, pickles, pickle brine, salt, and pepper until smooth. Refrigerate while everything else cooks.
- Mix onion powder, garlic powder, paprika, pepper, salt, and brown sugar in a small bowl. Sprinkle evenly over the ground beef.
- Heat a cast iron skillet over high heat. Add the beef and break it up as it cooks. Let some big pieces sit undisturbed so they develop chunky crispy, caramelized edges. Cook until fully browned with some crispy bits.
- While the beef cooks, shred the lettuce and chop or slice the tomatoes so everything is ready to assemble.
- Assemble the bowls. Add a layer of lettuce to each bowl, top with tomatoes, crispy beef, and hot fries, then drizzle generously with special sauce and add pickles if using. Serve immediately.

This was delicious. I love Christine’s recipes. I wanted to eat this for lunch but I have been trying to make sure to only eat meat at dinner so I sawed the ground beef for chickpeas and baked them. Obviously the ground meat tastes more like a burger but the chickpeas was a good lunch swap.
