Creamy Avocado Caesar Dressing

Some nights call for dinner that feels lighter but still tastes really good. With salmon in the fridge and vegetables already cooking, I wanted something creamy to bring everything together without reaching for a bottle from the store.

That is where this creamy avocado Caesar comes in. It has all the classic Caesar flavors from parmesan, Dijon, lemon, garlic, and Worcestershire. The avocado adds a silky, fresh finish that makes the whole dish feel complete.

I use a whole avocado because it gives the dressing the best texture and makes it feel a little more filling. An immersion blender makes this especially easy, creating a smooth, creamy dressing in seconds with minimal cleanup.

You can thin it with a little water for drizzling over bowls or keep it thicker for salads and wraps. I like making a batch at the start of the week and using it in a few different ways as the days go on.

How I Like to Use It

  • Drizzle it over salmon bowls with roasted sweet potatoes and green beans.
  • Toss it with romaine for a quick Caesar salad.
  • Use it as a dip for chicken, roasted potatoes, or veggie trays.
  • Spread it on wraps or sandwiches in place of mayo.

Creamy avocado Caesar dressing made from scratch with parmesan, lemon, Dijon, and Worcestershire. Smooth, flavorful, and perfect for salads, bowls, and drizzling.

Ingredients
  

  • 1/2 cup mayonnaise homemade or avocado oil mayo from the store
  • 1 ripe avocado
  • 1/4 cup finely grated parmesan cheese
  • 1 tablespoon Worcestershire sauce (If gluten free, double check the label for gluten-free, some brands contain gluten)
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • 1 garlic clove smashed or grated
  • 1/4 cup water plus more as needed
  • Salt to taste
  • Freshly cracked black pepper to taste

Method
 

  1. Add the mayonnaise, avocado, parmesan, Worcestershire, lemon juice, Dijon, and garlic to a blender or food processor.
  2. Add plenty of fresh cracked pepper and a pinch of salt.
  3. Pour in 1 fourth cup water to get it moving, then blend until completely smooth.
  4. Check the consistency and add a little more water if you want it thinner for drizzling.
  5. Taste and adjust with extra salt, lemon, or pepper until it tastes right to you.

    This was delicious Christine! I tend to like my food very richly seasoned and fragrant and your recipes have been welcoming for every palate this dish was super easy to follow and came out delicious. The Cesar dressing was ingenious it worked on the salmon and string beans and tomatoes and I did red potatoes and it was delicious on everything no ketchup or hot sauce needed.
