Creamy One-Pot Italian Tortellini Soup
This creamy Italian tortellini soup is rich comforting and comes together in one pot. With spinach, sausage, homemade Stock, cream, and tomatoey goodness. A warm and satisfying dinner everyone will love.

This is one of those dinners I make when the day feels long and I want everyone fed and happy without juggling multiple pots and dishes in the sink. It smells amazing while it cooks and feels like a little reward at the end of the day. I usually serve it with my crusty no-knead sourdough bread and call it a win when the kids ask for seconds. Ingredients
- Italian sausage or ground pork: Italian sausage brings bold flavor right away. Ground pork keeps it milder but I have the perfect seasoning blend to spruce up that ground pork. You can swap in ground turkey or chicken for a lighter option, or use a plant based sausage for a meat free version.
- Tortellini: Cheese filled tortellini is classic and keeps the soup creamy. Spinach or meat filled tortellini work well too.
- Tomatoes: Tomato paste adds depth while diced tomatoes add texture. I also added a cup of marinara for a tomato flavor boost and WOW. I do recommend.
- Chicken stock: This builds the base of the soup. I highly recommend you make your own homemade stock for the best flavor.
- Heavy cream: This gives the soup its creamy finish. You can also sub this out for half and half which makes it lighter. Or you can use coconut cream as a dairy free swap without changing the texture too much.
How I Make It
To start I season the pork with my own homemade sausage seasoning blend (see recipe). Brown the sausage until it’s caramelized and then remove it from the pot. Use a paper towel to clean out the pot and start fresh. A good deep dutch oven pot works especially well for this recipe. I love using my Caraway Dutch Oven for this recipe because it’s non toxic, non stick, and easy to cook with.
Add in a bit of olive oil, then add the onion and carrots and let them soften until everything smells sweet and savory. The garlic goes in next and only needs a moment before the flour, tomato paste and seasonings are stirred in. This step will help thicken the soup and give it that thick creamy base.
I pour in the stock and tomatoes and add marinara when I want a richer tomato flavor. Once the soup starts to simmer, I add the tortellini. Next, follow the package timing so it stays tender and not overcooked. This step turns the soup into a real meal. I stir in the spinach and let it wilt which only takes a minute. Finish it off with a splash of cream and taste to adjust the seasonings. I like to serve this with plenty of parmesan on top and a side of bread.

- If using pork, I would first season the meat in a bowl with 1 tsp salt, 1 tsp ground fennel, 1 tsp Italian seasoning, ½ tsp garlic powder, ½ tsp dried sage, ½ tsp black pepper, 1 tsp sugar or honey, 1 tbsp red wine vinegar, and 1 tbsp cold water.
Method
- Heat olive oil in a large pot and brown the sausage until cooked through and carmelized. Remove from pot and optionally clean out the pot with a paper towel to remove excess grease from this soup.
- Add 1 tbsp olive oil and saute onion and carrots until softened.
- Stir in garlic, cook for 1 minute. Add the flour, tomato paste, and Italian seasoning until well combined. Give those a minute to cook.
- Add the meat back in. Pour in chicken stock diced tomatoes and marinara if using. Bring to a gentle simmer.
- Cook tortellini according to package directions directly in the soup.
- Stir in spinach and heavy cream and cook until spinach wilts.
- Taste and adjust seasoning. Serve hot with parmesan.

This soup is delicious! Definitely add the marinara sauce; it really turns up the flavor!
I am not a huge fan of soup, but this was tasty. I halved the recipe and still had leftovers. I used the whole package of pasta; it made it less soupy. I also added a sprinkle mushroom powder and a dash of red wine vinegar to help balance the stock.
Delicious! Made this for dinner tonight exactly as written. Flavors were wonderful!! We will have this again!
