Ingredients
1lbground pork or Italian sausageIf using ground pork, see note 1
1tbspolive oil
1oniondiced
1cupcarrotsfinely chopped
3clovesgarlicminced
1/4cupflour
4tbsptomato paste
2tspItalian seasoning
114 1/2 oz can diced tomatoes
6cupschicken stock
1cupmarinara sauceoptional
19–12 oz package tortellini
3cupsfresh spinachchopped
1/3cupheavy cream
Fresh parmesanfor serving
Instructions
Heat olive oil in a large pot and brown the sausage until cooked through and carmelized. Remove from pot and optionally clean out the pot with a paper towel to remove excess grease from this soup.
Add 1 tbsp olive oil and saute onion and carrots until softened.
Stir in garlic, cook for 1 minute. Add the flour, tomato paste, and Italian seasoning until well combined. Give those a minute to cook.
Add the meat back in. Pour in chicken stock diced tomatoes and marinara if using. Bring to a gentle simmer.
Cook tortellini according to package directions directly in the soup.
Stir in spinach and heavy cream and cook until spinach wilts.
Taste and adjust seasoning. Serve hot with parmesan.

Notes
If using pork, I would first season the meat in a bowl with 1 tsp salt, 1 tsp ground fennel, 1 tsp Italian seasoning, ½ tsp garlic powder, ½ tsp dried sage, ½ tsp black pepper, 1 tsp sugar or honey, 1 tbsp red wine vinegar, and 1 tbsp cold water.
