This post includes 7 simple dinners planned out for the week, plus a free downloadable meal plan and master grocery list. Simple dinners planned ahead, leftovers built in, and fewer decisions during the week.

This full week of dinners is built to make everyday cooking feel more manageable. The meals are simple, filling, and designed to work together so you’re not starting from scratch every night. Ingredients overlap, leftovers are planned for, and there’s flexibility built in so the week doesn’t feel rigid.
I put this plan together the way I actually cook at home. A little prep at the beginning of the week, dinners that don’t require a lot of hands on time, and a mix of one pot, oven baked, and make ahead meals. Nothing fancy, just real food that feeds a family and keeps grocery shopping and decision making to a minimum.

Weekly Dinner Plan
Monday: Creamy Italian Tortellini Soup
Tuesday: Chicken Enchilada Casserole with Cilantro Lime Crema
Wednesday: Cheesy Beef, Bean & Rice Skillet
Thursday: BBQ Chicken Stuffed Sweet Potatoes with Tangy Ranch Slaw
Friday: Flex Night or Leftovers
Saturday: Easy Oven Baked Smash Burgers with Oven Fries
Sunday: Italian Meatballs in Marinara (served however you like, including meatball subs)
Each dinner stands on its own, but they’re planned together so ingredients carry through the week and nothing goes to waste.
Prep Ahead (Do Once, Save Time All Week)
- Cook and shred all 6 chicken breasts at the same time, and shred the cheese you’ll need for the week while you’re already in the kitchen making the enchilada casserole.
- Portion out the ground beef and sausage as soon as you get home from the store, and freeze anything you won’t use right away.
- Feed your sourdough starter Friday evening or early Saturday morning so it’s ready when you want to bake over the weekend.
- If you’re skipping homemade bread, make sure burger buns and sandwich rolls for the meatball subs are on your grocery list.
Monday – Creamy Italian Tortellini Soup
A one pot soup that feels filling without being heavy. It’s a good reset meal at the start of the week and makes great leftovers for lunch.

Tuesday – Chicken Enchilada Casserole with Cilantro Lime Crema
A family friendly casserole layered with shredded chicken and homemade enchilada sauce. The crema gets used again later in the week.

Wednesday – Cheesy Beef, Bean & Rice Skillet
A simple one pan dinner made with pantry staples. Everything cooks together and reheats well.

Thursday – BBQ Chicken Stuffed Sweet Potatoes with Tangy Ranch Slaw
Baked sweet potatoes topped with BBQ chicken and a tangy slaw. The ranch dressing is made once and used more than once.

Friday – Flex Night
Leftovers, fridge clean out, or a night off. Planning this in makes the rest of the week more realistic.
Saturday – Easy Oven Baked Smash Burgers with Oven Fries
Burgers and fries cooked entirely in the oven, which is especially nice when it’s cold out and grilling isn’t appealing.

Sunday – Italian Meatballs in Marinara
Tender baked meatballs finished in sauce. Serve them with pasta, bread, or turned into subs if you have good bread on hand.

I just did this meal plan for my family. Oh my! They’re all so delicious!!! My family and I loved all of the meals!!! The master grocery list is game changer!!! The only thing changed was in the bbq chicken recipe. We did smashed crispy baby potatoes instead of the sweet potatoes! That recipe, with the slaw………… so so delicious I started eating it as my breakfast with eggs added in!!! Thank you so much Christine!
