Oven Baked Smash Burgers with Oven Fries

This is one of those dinners I make when I want burgers but don’t feel like standing at the stove or firing up the grill. These oven smash burgers and oven fries cook entirely in the oven, which means very little cleanup and a meal that feeds a crowd without much effort.

The burgers bake as one big slab and get cut into squares, which makes this especially easy when I’m cooking for a group. I made this on a day when I wanted zero clean up. While they’re in the oven, the fries cook right alongside them, so everything comes together at about the same time.

How I Make It

I start by preheating the oven and lining a large baking sheet with parchment paper so cleanup stays easy and the burgers release cleanly. At the same time, I put an empty pan in the oven to preheat. That hot pan is what helps the fries get really crispy once they hit the oven.

The ground beef goes straight onto the parchment. I season it first with salt and pepper, then place another piece of parchment on top and press it into a large rectangle. Don’t worry about making it perfect. Once it’s pressed out, I peel off the top parchment and put it in the oven.

While the burgers bake, I prep the fries. I cut the potatoes into fries and toss them in a big bowl with oil, salt, and tapioca starch.

I liked using my lodge cast iron pan for crispy potatoes. I put the pan in the oven while it’s preheating and then pull the hot pan out of the oven, spread the fries onto it, and let them sizzle before sliding everything back in to bake.

The burgers bake until fully cooked, then I pull them out and cut them into squares. If I’m adding cheese, I lay it on while they’re hot and let it melt.

Easy Oven Baked Smash Burgers with Oven Fries

Ingredients
  

Burgers
  • 2 lbs ground beef 80/20 preferred
  • 1 tsp fine sea salt
  • ½ tsp black pepper
  • Burger buns
  • Cheese slices optional
Oven Fries
  • 3 large Yukon gold potatoes cut into fries
  • 2 tbsp olive or avocado oil
  • tsp fine sea salt
  • 1 tbsp tapioca starch optional

Method
 

For The Fries
  1. Prepare these first since they need longer to cook then the burgers. Preheat oven to 425. If using a large cast iron pan for the fries put it in the oven so it preheats with the oven. If using a sheet pan, line it with parchment paper.
  2. Wash and cut potatoes into fry shapes. Toss in a bowl with the salt, olive oil, and optional tapioca starch.
  3. Carefully remove the hot pan from the oven, spread the fries onto it in a single layer, and return it to the oven.
  4. Bake the fries on the middle rack for about 25-30 minutes, flipping halfway through (optional), until golden and crisp.
For The Burgers
  1. Place the ground beef in a bowl and season with salt and pepper. Line a half size sheet pan (13×18) with foil to catch grease and then parchment so the burgers don't stick. Place the meat flat on a parchment. Top with another piece of parchment and press the meat into a large rectangle about ½ to ¾ inch thick. It should fill the whole half sheet pan. Remove the top parchment.
  2. Bake the burgers at 425 for 12 to 14 minutes, until fully cooked.
  3. Remove from the oven and cut into squares. Add cheese if using and let it melt from the residual heat.
  4. Serve the burgers on buns with the oven fries.
