Ingredients

Burgers

  • 2 lbs ground beef 80/20 preferred
  • 1 tsp fine sea salt
  • ½ tsp black pepper
  • Burger buns
  • Cheese slices optional

Oven Fries

  • 3 large Yukon gold potatoes cut into fries
  • 2 tbsp olive or avocado oil
  • tsp fine sea salt
  • 1 tbsp tapioca starch optional

Instructions

For The Fries

  • Prepare these first since they need longer to cook then the burgers. Preheat oven to 425. If using a large cast iron pan for the fries put it in the oven so it preheats with the oven. If using a sheet pan, line it with parchment paper.
  • Wash and cut potatoes into fry shapes. Toss in a bowl with the salt, olive oil, and optional tapioca starch.
  • Carefully remove the hot pan from the oven, spread the fries onto it in a single layer, and return it to the oven.
  • Bake the fries on the middle rack for about 25-30 minutes, flipping halfway through (optional), until golden and crisp.

For The Burgers

  • Place the ground beef in a bowl and season with salt and pepper. Line a half size sheet pan (13x18) with foil to catch grease and then parchment so the burgers don't stick. Place the meat flat on a parchment. Top with another piece of parchment and press the meat into a large rectangle about ½ to ¾ inch thick. It should fill the whole half sheet pan. Remove the top parchment.
  • Bake the burgers at 425 for 12 to 14 minutes, until fully cooked.
  • Remove from the oven and cut into squares. Add cheese if using and let it melt from the residual heat.
  • Serve the burgers on buns with the oven fries.
