Instructions
For The Fries
Prepare these first since they need longer to cook then the burgers. Preheat oven to 425. If using a large cast iron pan for the fries put it in the oven so it preheats with the oven. If using a sheet pan, line it with parchment paper.
Wash and cut potatoes into fry shapes. Toss in a bowl with the salt, olive oil, and optional tapioca starch.
Carefully remove the hot pan from the oven, spread the fries onto it in a single layer, and return it to the oven.
Bake the fries on the middle rack for about 25-30 minutes, flipping halfway through (optional), until golden and crisp.
For The Burgers
Place the ground beef in a bowl and season with salt and pepper. Line a half size sheet pan (13x18) with foil to catch grease and then parchment so the burgers don't stick. Place the meat flat on a parchment. Top with another piece of parchment and press the meat into a large rectangle about ½ to ¾ inch thick. It should fill the whole half sheet pan. Remove the top parchment.
Bake the burgers at 425 for 12 to 14 minutes, until fully cooked.
Remove from the oven and cut into squares. Add cheese if using and let it melt from the residual heat.
