Felicity’s Fresh Milled Morning Waffles are my daughter’s go to recipe, made with freshly milled flour and simple pantry staples, cooking up soft, golden, and perfectly fluffy every single time.

There is something extra special about letting your child take the lead in the kitchen, and in our house, Felicity is officially the waffle maker. This is her recipe. She gathers the bowls, measures the flour, reminds me not to overmix, and always makes them nice and thick.
On this particular snow day in Georgia, while pork was slow cooking and bread dough was rising, she quietly made a batch of these waffles that fed our whole family. They were soft, flavorful, and perfectly golden. Freshly milled flour works beautifully here and never feels heavy or dense.
If you have a grain mill, this is one of the easiest and most reliable ways to use it.

Why Freshly Milled Flour Works So Well for Waffles
Waffles are one of the most forgiving things you can make with freshly milled flour. Unlike breads that require careful gluten development, waffles benefit from a gentle mix and a tender crumb, which makes them perfect for whole grain flour. Freshly milled hard red wheat gives these waffles a soft interior, a warm and slightly nutty flavor, and a beautiful golden color without feeling heavy or dense.
You can also use spelt, einkorn, hard white wheat, or a blend of grains with great results. My favorite grains to use for this are einkorn or spelt, it adds a nice flavor and softness. If you are not milling your own flour, all purpose flour works as an easy 1 to 1 substitute, so you can still enjoy this recipe no matter what you have on hand.
How Felicity Makes It 😉
Preheat your waffle maker while you prepare the batter. In one bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, whisk the eggs, milk, avocado oil, and vanilla until smooth. Pour the wet ingredients into the dry ingredients and gently stir just until combined. A few small lumps are perfectly fine, just be careful not to overmix.

Let the batter rest for about 10 minutes so the freshly milled flour can fully hydrate. This helps create a softer, more tender waffle.
Scoop the batter into your waffle maker, using more or less depending on how thick you like them. Cook until golden brown with a lightly crisp outside and a soft, fluffy center.

This was a great recipe! I always struggle with my butter becoming solid again when the cold milk hits it! When I saw you use Avocado oil in your video – I knew I had to try that out. It worked out great. I normally use soft white for our waffles. I tried hard red as suggested and that was a good swap too. I love your videos! Thanks for doing what you do!
