Salmon Avocado Roll in a Bowl
Crispy air fryer salmon bites piled over warm rice with creamy avocado, crunchy cucumber, seaweed, and a drizzle of spicy chili crisp mayo for the most fresh and satisfying sushi inspired bowl.

There is just something about a salmon bowl that makes me genuinely excited to eat it. Any kind of salmon bowl is my cup of tea, but this one is inspired by a california sushi roll I used to get. It’s fresh, colorful, nourishing, and packed with flavor. You’ve got sticky rice, crispy salmon bites, crunchy cucumber, creamy avocado, seaweed, and a spicy chili crisp mayo that ties it all together.
And it’s not just delicious, it’s satisfying too, with about 35 grams of protein and 5 grams of fiber per bowl to make for a very well rounded meal!
It feels a little fancy, but it’s honestly one of those meals you can throw together really fast if you already have rice and homemade mayo on hand, and I love that.

Main Ingredients & Simple Swaps
- Wild Alaskan salmon – rich, flavorful, and packed with omega threes, though any fresh salmon filet works beautifully here.
- Garlic powder and onion powder – keep the seasoning simple and savory, but you could also use a light sprinkle of smoked paprika or a dash of soy sauce for a slightly different flavor profile.
- Cornstarch – helps the salmon develop those crispy edges in the air fryer.
- Honey – adds a subtle touch of sweetness and helps with caramelization, though brown sugar would add extra crisp to the salmon.
- White rice – creates that classic sushi bowl base, though jasmine rice, sushi rice, or even brown rice all work depending on what you have.
- Cucumber – adds freshness and crunch, and you can swap in shredded cabbage or snap peas if needed.
- Carrots or slaw mix – bring color and texture, and using leftover slaw makes this bowl even easier to assemble.
- Avocado – adds creaminess and healthy fats, I would not skip out on this!
- Seaweed snacks – give that sushi inspired flavor, but you can leave them out if you do not have them.
- Mayonnaise – forms the base of the sauce, you can use my easy homemade mayo or store bought is fine.
- Chili Crisp – I love the pop of flavor and crunch it gives to this sauce! I like this brand.
How I Make It
Start by cutting the salmon into bite sized pieces. Toss it with garlic powder, onion powder, salt, cornstarch, honey, and a little olive oil so everything is lightly coated.
Preheat your air fryer to 400°F (200°C). Cook the salmon in a single layer for about 8 minutes until the edges are crispy and the inside is tender (skip on the parchment paper liner here if you want this to get extra crispy).
While the salmon cooks, stir together mayonnaise and chili crisp to make the sauce. Adjust the spice by adding more mayo if needed.

Warm your rice and prep the toppings. Chop cucumber, slice avocado, and grab your seaweed.
Build your bowl with rice on the bottom, crispy salmon on top, fresh veggies, and a generous drizzle of spicy mayo. Mix it all together and enjoy 🙂

- For extra crispiness, skip parchment paper in the air fryer so air can circulate freely.
- Each bowl has about 35g of protein and 5g of fiber, making this a very well balanced meal!
Method
- Preheat air fryer or oven to 400°F (200°C).
- In a bowl, toss salmon with garlic powder, onion powder, salt, cornstarch, honey, and olive oil until evenly coated.
- Arrange salmon in a single layer in the air fryer basket. Cook for 8 minutes, or until crispy on the edges and cooked through. Do not overcrowd. Do this in batches.
- In a small bowl, stir together mayo and chili crisp to make the sauce. Adjust spice level as desired.
- Warm rice if needed.
- Assemble bowls with rice, crispy salmon, cucumber, carrots or slaw, avocado, seaweed, and drizzle with spicy mayo.
