This is one of those recipes that came out of a really normal week in my kitchen, just trying to use what I already had and make something practical for our family.

I had made a couple whole chickens in the Instant Pot and knew I wanted something easy my kids could grab for lunches. I’ve been trying to move away from processed deli meat, so this felt like a really good option to have on hand.

It’s simple, really flavorful, and easy to adjust depending on what you have. Once the chicken is already cooked, it comes together quickly and gives you something you can keep in the fridge and use throughout the week for other meals.

  • Cooked chicken – shredded or chopped (Instant Pot or rotisserie both work well)

  • Dijon mustard – adds depth and a subtle tang that helps bring everything together
  • Honey – balances the flavors and adds just a touch of sweetness
  • Lemon juice – fresh is best for brightness and really helps lift the whole dish
  • Garlic – freshly grated for the best flavor and a little extra kick
  • Parsley – optional, but really adds some freshness and color to the whole dish
  • Celery – Celery is essential here, it adds so much freshness and crunch to the dish
  • Walnuts – I love adding these for crunch and texture (pecans work great here too)
  • Grapes – add natural sweetness and a nice contrast (or use craisins or rainsins if that’s what you have)
  • Apple Cider Vinegar – This just bring out a little pop of flavor at the end!

How I Make It

  1. Prep the mix-ins – Chop the grapes, nuts, celery, and parsley so everything is ready to go.
  2. Make the sauce – In a bowl, stir together the mayo, Dijon mustard, honey, lemon juice, garlic, salt, and black pepper until smooth. Give it a quick taste and adjust if needed. You can add a little more lemon for brightness or a touch more honey if you want it slightly sweeter.
  3. Cook and prep the chicken – This recipe uses a batch of my Instant Pot whole chicken, but a store-bought rotisserie chicken works just as well. Take a few extra minutes to shred and chop the chicken into smaller, even pieces so you don’t end up with large chunks.
  4. Combine everything – Add the chicken to a large bowl along with the grapes, nuts, and parsley. Pour the dressing over the top and mix until everything is evenly coated. Use a larger bowl than you think so you have room to mix everything together.
  5. Adjust taste – Taste again and adjust as needed. I usually end up adding a little extra lemon juice or salt at the end to bring everything together.

Notes From My Kitchen

This is one of those recipes I tweak depending on how much chicken I have. If you’re making a bigger batch, just add a little more dressing until everything is evenly coated.

I also like using a mix of olive oil and avocado oil when I make homemade mayo. It gives a really nice flavor and you can adjust it however you like.

Sometimes I’ll add extra grapes if we want it sweeter or more nuts if we want more texture. It’s really flexible and hard to mess up.

How I Serve It

You can serve this in so many different ways depending on what you need. It’s great on sandwiches or croissants for a quick lunch, tucked into wraps for something easy to take on the go, or served with crackers for a simple snack. You can also spoon it over greens to turn it into a quick, light salad that still feels really satisfying.

Store in an airtight container in the refrigerator for up to 3–4 days. This is perfect to make ahead and use throughout the week.

Ingredients
  

  • 3 –4 cups cooked chicken shredded or chopped
  • ½ cup mayo (try my Easy Homemade Mayo Recipe (1 minute- Mayo with Healthy Oils)
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • Juice of ½–1 lemon
  • 1 clove garlic grated
  • ¼ tsp salt plus more to taste
  • Black pepper to taste
  • 2 -3 stalks of celery
  • 1 cup red grapes halved
  • 1/2 cup walnuts or pecans chopped
  • 2 tbsp fresh parsley chopped
  • 1 tsp apple cider vinegar

Notes

  • Adjust the amount of dressing depending on how much chicken you’re using.

Method
 

  1. Start by prepping your mix-ins. Chop the grapes, nuts, parsley, and celery into small, even pieces so everything mixes together well.
  2. In a bowl, stir together the mayo, Dijon mustard, honey, lemon juice, apple cider vinegar, garlic, salt, and black pepper until smooth. Give it a quick taste and adjust if needed.
  3. Add your shredded chicken to a large bowl along with the grapes, celery, nuts, and parsley. Pour the dressing over the top and mix everything together until well coated.
  4. Taste again and adjust as needed, adding a little more lemon juice or salt to bring everything together.

    This is the best chicken salad. I didn’t have Dijon or the vinegar on hand. I did add some Greek yogurt to my mayo mixture. It was so good!!
