Ingredients

  • 3 –4 cups cooked chicken shredded or chopped
  • ½ cup mayo (try my Easy Homemade Mayo Recipe (1 minute- Mayo with Healthy Oils)
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • Juice of ½–1 lemon
  • 1 clove garlic grated
  • ¼ tsp salt plus more to taste
  • Black pepper to taste
  • 2 -3 stalks of celery
  • 1 cup red grapes halved
  • 1/2 cup walnuts or pecans chopped
  • 2 tbsp fresh parsley chopped
  • 1 tsp apple cider vinegar

Instructions

  • Start by prepping your mix-ins. Chop the grapes, nuts, parsley, and celery into small, even pieces so everything mixes together well.
  • In a bowl, stir together the mayo, Dijon mustard, honey, lemon juice, apple cider vinegar, garlic, salt, and black pepper until smooth. Give it a quick taste and adjust if needed.
  • Add your shredded chicken to a large bowl along with the grapes, celery, nuts, and parsley. Pour the dressing over the top and mix everything together until well coated.
  • Taste again and adjust as needed, adding a little more lemon juice or salt to bring everything together.
