These chocolate chip energy bites are a quick, no-bake snack made with simple ingredients like cashews, dates, and chocolate chips for a naturally sweet, satisfying treat.

These are one of those little things I almost always have in the fridge, especially during busy weeks. I’ll make a batch while I’m already in the kitchen, and they end up getting grabbed all day long. They come together really quickly with simple ingredients, which makes them an easy go-to when I need something on hand.
I also pack these in my kids’ lunches all the time. They feel like a treat, but they’re made with ingredients I actually feel good about giving them. It’s one of those small swaps that just works really well for our family.
They remind me a little bit of cookie dough, but in a more everyday, nourishing kind of way.

How I Make It
Pusle the cashews – Start by adding the cashews to a food processor and pulse until they break down into small crumbs.


Pulse remaining ingredients – Add in the dates, vanilla extract, and salt. Continue processing until the mixture starts to come together into a thick, sticky dough. I like to use this food processor. It’s one I’ve had for years, and it’s always been reliable and works really well for recipes like this.

Add chocolate chips – Once it turns into a sticky dough, add the chocolate chips and pulse a few more times just to combine.


Scoop into balls – Scoop out small portions and roll into bite-sized balls. You can make them any size you like, but smaller bites work really well for snacks and lunches. I like to use this mini ice cream scooper for this because it keeps the bites nice and uniform.

Refrigerate – Place them in the fridge for an hour or so to set and then enjoy 🙂

Notes From My Kitchen
These can easily be shaped into bars instead of bites. Just press the mixture into a parchment-lined pan, refrigerate, and slice into squares.
I usually make them into smaller bites because they’re easier to grab and pack, especially for school lunches.
If your mixture feels too dry, add another date or two or just keep pulsing a little longer and see if it come together.
Store in an airtight container in the refrigerator. You can also freeze them for longer storage and just grab a few at a time as needed.
