Braised Beef Bowls with Roasted Sweet Potatoes & Jalapeño Ranch Slaw
Tender braised beef served over roasted sweet potatoes with crunchy slaw and creamy jalapeño ranch for an easy meal prep style dinner.

This was one of those meals that started with me just trying to make one big batch of protein for the week and somehow turned into one of my favorite dinners we’ve had lately. I had a chuck roast thawing, some sweet potatoes sitting on the counter, and a bunch of herbs I needed to use up, so I started building dinner around that.
The braised beef cooks low and slow until it’s tender enough to shred, the sweet potatoes roast until soft and caramelized, and then everything gets topped with a crunchy slaw and creamy jalapeño ranch. It feels hearty and fresh at the same time, which is one of my favorite combinations for meals like this.
I also love that this dinner naturally sets you up for easier meals later in the week because the braised beef can be reused in quesadillas, bowls, tacos, or lunches.
Main Ingredients & Swaps
- Braised beef – I use my simple braised beef recipe here because it’s flavorful, meal prep friendly, and works perfectly for bowls throughout the week.
- Sweet potatoes – roast beautifully in the oven and add sweetness that works really well with the savory beef.
- Cabbage or coleslaw mix – keeps the slaw simple and adds freshness and crunch to the bowls.
- Kale – I added kale for extra color and texture, but you can leave it out if preferred.
- Jalapeño ranch – ties the whole bowl together and adds creamy fresh flavor. You can use my homemade jalapeño ranch recipe here.
How I Make It
I start by making a batch of my simple braised beef recipe ahead of time. You can find the full recipe here: Simple Braised Beef
While the beef cooks, I roast the sweet potatoes until soft and caramelized. At the same time, I toss together a quick slaw using cabbage, kale, and some of the jalapeño ranch dressing.
Once everything is ready, I layer the bowls with roasted sweet potatoes, shredded beef, slaw, and extra jalapeño ranch on top.
Tips
- Roasting the sweet potatoes until very soft brings out their sweetness and works really well with the savory beef.
- You can prep the jalapeño ranch ahead of time and keep it in the fridge for several days.
- This meal works great for leftovers and meal prep lunches throughout the week.

Method
- Prepare a batch of my simple braised beef recipe and keep warm.
- Preheat the oven to 425°F (220°C).
- Place the sweet potatoes on a baking sheet and roast for about 45 minutes or until very soft.
- Toss the cabbage and kale with enough jalapeño ranch to lightly coat.
- Assemble bowls with roasted sweet potatoes, braised beef, slaw, and extra jalapeño ranch.
