How I Make It

First, melt together butter, honey, and brown sugar to create a syrup. Turn off the heat and then mix in the cinnamon, vanilla, almond butter, and salt.

Next, add in the oats, rice cereal, seeds of choice into the syrup and stir until everything is incorporated.

Transfer to a parchment lined large pullman loaf pan and top with chocolate chips. Then using the parchment paper, press down firmly into the pain. Transfer to the fridge to cool.

After it hardens up, about 1-2 hours, you can cut them into slices. I like to store them in the fridge to keep them fresh.

Ingredients
  

  • 1/4 cup salted butter
  • 1/4 cup honey
  • 1/4 cup brown sugar
  • 1 tbsp almond butter
  • 1 tsp cinnamon
  • 2 tsp vanilla extract
  • 1 pinch salt
  • 1.5 cups rolled oats
  • 2 cups rice cereal
  • 1/4 cup seeds of choice (I prefer ground flaxseed and pumpkin seeds)
  • 1/3 cup mini chocolate chips for topping

Method
 

  1. In a medium pot over medium heat, melt together butter, honey, and brown sugar until it starts to bubble up. Turn off heat.
  2. Add almond butter, cinnamon, vanilla extract, and salt. Mix well.
  3. Add oats, mix. Add rice cereal and seeds. Mix well and transfer to a 12-inch parchment lined loaf pan.
  4. Sprinkle the top with chocolate chips and fold the parchment paper over the granola bar mixture and press down firmly with your hands to flatten it out.
  5. Place in fridge for 1–2 hours before cutting. Store in a container in the fridge.

    I loved these! I’m trying to go sugar free (using honey and maple syrup instead) so I used only honey for this recipe but now I’m gonna try honey and maple syrup because with just honey they fell apart 🙁 I used raisins and chopped walnuts and chopped dark chocolate instead of seeds too. Everyone loved them – great recipe!

      I tried these today and I loved it. I admit I went by memory when I realized after I made the recipe I added 2 cups of oats and 1.5 cups of cereal. But I used pine nuts, flax seeds and chia seeds. I will make this again.
