Seedy Chewy No-Bake Granola Bars

Ingredients

  • 1/4 cup salted butter
  • 1/4 cup honey
  • 1/4 cup brown sugar
  • 1 tbsp almond butter
  • 1 tsp cinnamon
  • 2 tsp vanilla extract
  • 1 pinch salt
  • 1.5 cups rolled oats
  • 2 cups rice cereal
  • 1/4 cup seeds of choice (I prefer ground flaxseed and pumpkin seeds)
  • 1/3 cup mini chocolate chips for topping

Instructions

  • In a medium pot over medium heat, melt together butter, honey, and brown sugar until it starts to bubble up. Turn off heat.
  • Add almond butter, cinnamon, vanilla extract, and salt. Mix well.
  • Add oats, mix. Add rice cereal and seeds. Mix well and transfer to a 12-inch parchment lined loaf pan.
  • Sprinkle the top with chocolate chips and fold the parchment paper over the granola bar mixture and press down firmly with your hands to flatten it out.
  • Place in fridge for 1–2 hours before cutting. Store in a container in the fridge.
