Same-Day Sourdough Buns in a Bread Machine with Freshly Milled Wheat

These soft and fluffy sourdough & yeast buns are made with freshly milled wheat and mixed in the bread machine for a quick and simple, hands-off dough. Perfect for sandwiches or dinner rolls.

I love this recipe because the bread machine does almost everything for me. These buns are one of my favorite fresh milled recipes to make when I want some homemade buns for burgers or french dip sandwiches for dinner. Using both sourdough and instant yeast gives great rise and taste, and the machine takes care of the mixing and warm fermentation. It makes the whole process feel almost effortless.
How Its Made
This dough is made right in my bread machine because it keeps everything so easy. I add the water, butter, starter, egg, salt, and sugar to the pan first, then pour the fresh milled flour on top. Add the yeast right on top of the flour.


I run option 12 on my KBS bread machine, which is the fermentation cycle. It mixes the dough a couple of times, keeps it warm, and gives it a full two hour rise without me doing anything.
When the cycle finishes, take the dough out and divide it into eight pieces. Shape them into buns and place them on a sheet pan. Cover with a towel and let them rise again until they look puffy.
Before going into the oven, I like to brush the tops with an egg wash to add some color, but you can also skip that part. Bake them at 350 F until they turn golden. You can also brush the warm buns with melted butter when they come out of the oven for an event softer bun.


Tips
- Fresh milled hard red wheat absorbs more water, so the dough may look a little firm at first. It softens as the machine mixes.
- If the dough still looks dry after a few minutes, I drizzle in a tiny bit of water until it forms a smooth ball.
- Brushing the warm buns with melted butter keeps the crust soft.
- If the tops brown faster than you want, bake on the middle or lower rack.
- You can freeze the buns once they are cooled. I slice them first so they are ready to grab and toast.
Uses
- These make the best sandwich buns. They hold up well but stay soft. I love to use them when I make my Slow Cooker French Dip Sandwiches
- They are perfect for burger nights too!
- Shape them any way you want, hot dogs buns, burger buns, hoagie buns, it’s up to you!

Quick Bread Machine Sourdough Yeast Buns with Freshly Milled Wheat

Method
- Add the water, melted butter, starter, egg, salt, and sugar to the bread machine pan.
- Pour the freshly milled flour on top.
- Add the yeast on top.
- Select option 12 on the KBS bread machine or run a similar dough or ferment cycle.
- Let the machine knead and warm the dough for about two hours.
- When the cycle ends, turn the dough onto a lightly flour surface or wet the counter lightly with your hand.
- Divide the dough into eight equal pieces.
- Shape each piece into buns and place them on a parchment lined baking sheet. Cover.
- Let the buns rise again until puffy (30-45 minutes)
- Brush the tops with an egg wash.
- Bake at 350 F for 18 to 20 minutes, until golden.
- Brush the warm buns with melted butter.
