Quick Bread Machine Sourdough Yeast Buns with Freshly Milled Wheat

Quick sourdough yeast buns made with freshly milled wheat and mixed in the bread machine. Soft, flavorful, and perfect for sandwiches, sliders, or everyday meals.

Wet Ingredients 230 g lukewarm water 28 g melted butter or coconut oil 100 g sourdough starter or discard 1 large egg 50 g sugar or 35 g for a less sweet bun Dry Ingredients 450 g freshly milled hard red wheat flour 9 g fine sea salt 6 g instant yeast
Add the water, melted butter, starter, egg, salt, and sugar to the bread machine pan.
Pour the freshly milled flour on top.
Add the yeast on top.
Select option 12 on the KBS bread machine or run a similar dough or ferment cycle.
Let the machine knead and warm the dough for about two hours.
When the cycle ends, turn the dough onto a lightly flour surface or wet the counter lightly with your hand.
Divide the dough into eight equal pieces.
Shape each piece into buns and place them on a parchment lined baking sheet. Cover.
Let the buns rise again until puffy (30-45 minutes)
Brush the tops with an egg wash.
Bake at 350 F for 18 to 20 minutes, until golden.
Brush the warm buns with melted butter.
