Simple Creamy Cabbage Slaw

This is one of those slaws that I throw together without overthinking it.

It’s crunchy, creamy, a little tangy, and just slightly sweet to balance everything out. I love using it in buffalo chicken bowls, salmon bowls, or even just alongside grilled meat. It adds freshness and texture that pulls the whole meal together.

And honestly, it’s simple. Just cabbage, carrots, a little red onion, and a quick creamy dressing.

Main Ingredients and Swaps

  • Red cabbage & Green cabbage – adds color and crunch, though you can use either green or red if that is all you can find.
  • Carrots – add natural sweetness and brightness, and pre shredded carrots work perfectly.
  • Red onion – brings a mild bite, you can omit this if you don’t have it!
  • Mayonnaise – creates the creamy base, you can use my quick homemade mayo or store bought.
  • Distilled white vinegar – gives the slaw its subtle tang, though apple cider vinegar works well too.
  • Honey – softens the acidity and balances the dressing perfectly.
  • Parsley – I love the fresh flavor this adds

How I Make It

Thinly slice the red and green cabbage and shred the carrots. You can use a sharp knife, however, I like to use this food processor with the slicing and shredding attachments to make it much quicker.

Add the cabbage, carrots, and thinly sliced red onion to a large bowl.

Stir in the mayonnaise, vinegar, and salt until everything is evenly coated. Taste and add a small drizzle of honey to balance out the vinegar.

Let the slaw sit for about 15 to 20 minutes before serving so the flavors can come together. Use this in my Salmon Avocado Roll in a Bowl or alongside something simple like my Smoked BBQ Chicken Breast.

Ingredients
  

  • ½ red cabbage thinly sliced
  • ½ green cabbage thinly sliced
  • 3 carrots shredded
  • ¼ red onion thinly sliced
  • 1/2 cup chopped parsley
  • ½ cup mayonnaise
  • 1 tablespoon distilled white vinegar
  • ½ teaspoon salt
  • 1 to 2 teaspoons honey to taste

Method
 

  1. Thinly slice the red and green cabbage and shred the carrots in a food processor.
  2. Add cabbage, carrots, red onion, and parsley to a large bowl.
  3. Stir in mayonnaise, vinegar, and salt until evenly coated.
  4. Taste and add honey as needed to balance the acidity.
  5. Let sit for 15 to 20 minutes before serving.
