- ½ red cabbage thinly sliced
- ½ green cabbage thinly sliced
- 3 carrots shredded
- ¼ red onion thinly sliced
- 1/2 cup chopped parsley
- ½ cup mayonnaise
- 1 tablespoon distilled white vinegar
- ½ teaspoon salt
- 1 to 2 teaspoons honey to taste
Thinly slice the red and green cabbage and shred the carrots in a food processor.
Add cabbage, carrots, red onion, and parsley to a large bowl.
Stir in mayonnaise, vinegar, and salt until evenly coated.
Taste and add honey as needed to balance the acidity.
Let sit for 15 to 20 minutes before serving.
