Ingredients

  • ½ red cabbage thinly sliced
  • ½ green cabbage thinly sliced
  • 3 carrots shredded
  • ¼ red onion thinly sliced
  • 1/2 cup chopped parsley
  • ½ cup mayonnaise
  • 1 tablespoon distilled white vinegar
  • ½ teaspoon salt
  • 1 to 2 teaspoons honey to taste

Instructions

  • Thinly slice the red and green cabbage and shred the carrots in a food processor.
  • Add cabbage, carrots, red onion, and parsley to a large bowl.
  • Stir in mayonnaise, vinegar, and salt until evenly coated.
  • Taste and add honey as needed to balance the acidity.
  • Let sit for 15 to 20 minutes before serving.
