Weekly Dinner Plan: 4 Easy Family Dinners with Simple Ingredient Overlap
This week’s dinner plan is filled with simple, family friendly meals that use many of the same ingredients without making you feel like you are eating the same dinner every night.

Welcome to this month’s meal plan! We are starting the week with bright California Style Salmon Rice Bowls topped with a creamy Sriracha lime sauce. Tuesday’s dinner is a comforting pan of chicken and Yukon Gold potatoes baked in a creamy garlic herb sauce. Homemade Sloppy Joes make an easy midweek meal, and we will finish the week with a freezer friendly meatloaf filled with caramelized onions and zucchini.
One of my favorite parts about this meal plan is how much ingredient overlap there is throughout the week. The same onions, garlic, ground beef, potatoes, rice, and fresh vegetables are used across several meals. A two pound bag of green beans is divided between Tuesday and Friday, which means less food sitting around in the refrigerator and fewer ingredients to remember at the grocery store.
Thursday is left open as a flex night so you can finish leftovers, use anything that needs to be eaten, or simply take a night off from cooking.
As always, these dinners are made with simple ingredients and plenty of fresh flavor. A little planning at the beginning of the week makes it much easier to get homemade meals on the table during busy evenings.
This Week’s Dinner Lineup
Monday: California Style Salmon Rice Bowls with Creamy Sriracha Lime Sauce
Smoky, lightly sweet salmon is served over fluffy rice with a fresh avocado cucumber salad and creamy Sriracha lime sauce. It is a bright and easy dinner that comes together quickly, making it perfect for the beginning of the week.

Tuesday: Chicken and Potatoes with Garlic Herb Cream Sauce
Golden chicken thighs and Yukon Gold potatoes bake together in a creamy garlic herb sauce with greens, fresh basil, and Parmesan cheese. Serve it with half of the green beans for a simple and filling family dinner.

Wednesday: Homemade Sloppy Joes
These homemade Sloppy Joes are made with ground beef, peppers, onions, and a rich tomato sauce that is sweet, tangy, and just a little smoky. Butter and toast the buns before serving so they hold up to the sauce, then add pickles on top for a little crunch.

Thursday: Flex Night or Leftovers
Use Thursday to finish any leftover chicken, salmon bowls, or Sloppy Joe filling. This is also a good opportunity to use extra rice, vegetables, buns, or green beans before making the final dinner of the week.
Friday: Freezer Friendly Meatloaf with Zucchini and Caramelized Onions
This tender meatloaf is filled with caramelized onions, zucchini, and oats, then finished with a simple tangy glaze. Make half of the original bulk prep recipe for this meal plan and serve it with the remaining green beans.
The full recipe makes two large freezer portions, so cut each ingredient in half to prepare one family dinner. You can shape it into one large loaf or divide it into two smaller loaves so it cooks a little faster. Any leftover slices are also delicious in sandwiches over the weekend.

Ingredients You’ll Use More Than Once
One of the easiest ways to make weekly meal planning feel more manageable is to intentionally choose recipes that use some of the same ingredients.
This helps reduce food waste, keeps the grocery list more reasonable, and saves you from buying specialty ingredients that only get used once.
This week you will reuse:
- Chicken stock
- White rice
- Ground beef
- Yellow onions
- Fresh garlic
- Green beans
- Fresh herbs
Optional Prep Ahead
A few simple prep tasks can make these dinners come together even faster during the week.
- Make the creamy Sriracha lime sauce for the salmon bowls. (Don’t do this more than two days in advance for fresher flavor)
- Cook the rice ahead of time or rinse and measure it so it is ready to go.
- Sloppy joe meat can be made fully in advance and reheated in a skillet for dinner.
- Dice the onions and peppers, and mince the garlic needed throughout the week.
- Trim the 2 pound bag of green beans and divide it between Tuesday and Friday.
- Prepare half a batch of the meatloaf mixture and refrigerate it until Friday.
