Blueberry Vanilla Latte

A lightly sweetened blueberry coffee drink made with homemade blueberry compote, espresso, milk, and vanilla.

Blueberry Compote
- 2 cups blueberries
- ½ cup water
- ⅓ cup sugar
- 1 teaspoon vanilla bean paste
Assembly (for 1 latte)
- Ice
- 3 tablespoons blueberry compote
- 1 shot espresso chilled
- ½ cup milk
- Dash of heavy cream
Make the Blueberry Compote
Add the blueberries, water, and sugar to a small saucepan.
Bring to a gentle simmer over medium heat.
Cook for 15 to 20 minutes, stirring occasionally and mashing the berries as they soften.
Continue cooking until the mixture thickens into a spoonable compote.
Remove from the heat and stir in the vanilla bean paste.
Transfer to a jar and allow to cool.
Make the Latte
Fill a glass with ice.
Add 3 tablespoons of blueberry compote.
Pour in the chilled espresso.
Add the milk and a dash of heavy cream.
Stir well and enjoy.
