Ingredients

  • 4 tbsp salted butter
  • 1 onion diced
  • 1 tsp salt
  • 1/4 tsp pepper
  • 3 cloves garlic minced
  • 1/4 cup flour
  • 2 cups whole milk
  • 4 cups chicken broth keep 1 cup aside for the cottage cheese blend
  • 4 cups finely chopped broccoli
  • 1 large carrot shredded
  • 1 tbsp Dijon
  • 1 cup cottage cheese
  • 3 cups shredded cheddar cheese

Instructions

  • Melt the butter in a large pot over medium heat. Add the onion, salt, and pepper. Cook until the onion softens. Add the garlic and cook briefly.
  • Sprinkle the flour over the onions. Stir and let it cook for about a minute.
  • Pour in the milk slowly while whisking. Add three cups of broth. Bring the mixture to a gentle simmer.
  • Add the broccoli, carrot, and Dijon. Simmer until the broccoli is tender.
  • Blend the cottage cheese with the remaining cup of broth until smooth.
  • Pour the blended mixture into the pot. Keep the heat low and add the cheddar a little at a time. Stir until melted.
  • Taste the soup and adjust the seasoning. Let it thicken slightly before serving.
