Cheesy Beef, Bean & Rice Skillet

Ingredients

  • 1 lb ground beef
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 tbsp EACH: chili powder, cumin, and onion powder
  • tsp garlic powder
  • tsp smoked paprika
  • 1 tsp salt
  • 1 4oz can green chiles or 1/4 cup salsa
  • 1 14.5 oz can can diced tomatoes 14.5 oz
  • 1 15oz can black beans drained
  • 1 cup corn
  • 1 cup jasmine rice or basmati white rice
  • 2 cups chicken stock
  • 2 cups shredded cheese

Avocado Cilantro Lime Crema

  • 1/2 cup sour cream
  • 1 cup cilantro leaves
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/2 an avocado
  • juice of 1 lime
  • 1/4 cup water

Instructions

  • Heat a large skillet over medium heat. Add the ground beef and onion and cook until the beef is browned and the onion is soft.
  • Add the garlic and spices and cook for about one minute, stirring often.
  • Stir in the green chiles, diced tomatoes, black beans, corn, rice, and chicken stock.
  • Cover and simmer for 18 to 20 minutes, until the rice is tender.
  • Turn off the heat, stir in the cheese, then cover and let rest for 2 to 3 minutes before serving.

Avocado Cilantro Lime Crema

  • Blend together all the ingredients in a small blender or food processor and add extra water to thin to desired consistency.
