Chewy Seedy Granola Bars

Soft, chewy, crunchy, and delicious. These granola bars smell like homemade cookies when you make them and they are sure to please everyone! Perfect for packing in school lunches and a little bit addicting : )

Ingredients
  

  • 1/4 cup salted butter
  • 1/4 cup honey
  • 1/4 cup brown sugar
  • 1 tbsp almond butter
  • 1 tsp cinnamon
  • 2 tsp vanilla extract
  • 1 pinch salt
  • 1.5 cup rolled oats
  • 2 cup rice cereal
  • 1/4 cup seeds of choice I prefer ground flaxseed and pumpkin seeds
  • 1/3 cup mini chocolate chips for topping

Instructions
 

  • In a medium pot over medium heat, melt together butter, honey, and brown sugar until it starts to bubble up. Turn off heat.
  • Add almond butter, cinnamon, vanilla extract and salt. Mix well.
  • Add oats, mix. Add rice cereal and seeds. Mix well and transfer to a 12 inch parchment lined loaf pan.
  • Sprinkle the top with chocolate chips and fold the parchment paper over the granola bar mixture and press down firmly with your hands to flatten it out. Place in fridge for 1-2 hours before cutting. Store in a container in the fridge.
