Soft, chewy, crunchy, and delicious. These granola bars smell like homemade cookies when you make them and they are sure to please everyone! Perfect for packing in school lunches and a little bit addicting : )
1/4cupseeds of choiceI prefer ground flaxseed and pumpkin seeds
1/3cupmini chocolate chipsfor topping
Instructions
In a medium pot over medium heat, melt together butter, honey, and brown sugar until it starts to bubble up. Turn off heat.
Add almond butter, cinnamon, vanilla extract and salt. Mix well.
Add oats, mix. Add rice cereal and seeds. Mix well and transfer to a 12 inch parchment lined loaf pan.
Sprinkle the top with chocolate chips and fold the parchment paper over the granola bar mixture and press down firmly with your hands to flatten it out. Place in fridge for 1-2 hours before cutting. Store in a container in the fridge.
