Chicken Caesar Salad Wraps

Ingredients

For the Tortillas:

  • 8 large tortillas – homemade with fresh milled flour (see blog for link or store-bought)

Make the Mayo

  • 1 whole egg room temperature
  • 3/4 cup neutral oil like avocado or grapeseed
  • 1 tbsp dijon mustard
  • 2 tsp white vinegar plus more to taste

For the Caesar Dressing:

  • 2 tbsp Worcestershire sauce
  • 1/2 cup grated parmesan cheese
  • 1 tbsp anchovy paste or minced anchovies high quality
  • 1-2 garlic cloves grated
  • Salt and pepper to taste
  • squeeze of fresh lemon juice to taste

For the Chicken:

  • 2 lbs boneless (3 large skinless chicken breasts - sliced thin)
  • 1.5 tsp Salt to season the chicken before cooking
  • 1 tsp pepper to season chicken before cooking
  • 2 tsp Italian seasoning
  • 1-2 tbsp avocado oil for cooking

For Assembly:

  • Romaine lettuce chopped
  • Extra parmesan optional
  • Additional Caesar dressing for drizzling

Instructions

Prepare the Tortillas

  • Make homemade tortillas using freshly milled flour (see blog for link), or warm store-bought ones.
  • Keep them covered with a clean towel to stay soft and pliable.

Make the Mayo Base

  • In a tall jar, add the egg, oil, mustard, and vinegar.
  • Blend with an immersion blender until thickened into creamy mayo.
  • Do not salt—seasoning will come in with the Caesar ingredients.

Make the Caesar Dressing

  • Add Worcestershire sauce, parmesan, anchovy paste, garlic, lemon juice, and pepper to the mayo.
  • Whisk until smooth and well combined.
  • Taste and adjust, layering ingredients until balanced.

Cook the Chicken

  • Pound thin-sliced chicken breasts to even thickness.
  • Season both sides with salt, pepper, and Italian seasoning.
  • Heat avocado oil in a Caraway stainless steel pan over medium-high heat.
  • Sear chicken without flipping until it naturally releases and is well browned, then cook the other side until golden and cooked through.
  • Let rest, then slice into strips.

Assemble the Wraps

  • Lay out a tortilla.
  • Add chopped romaine, sliced chicken, and a spoonful of Caesar dressing.
  • Sprinkle with extra parmesan if desired.
  • Fold, wrap, and enjoy!
