Chocolate Brownie Bites Made with Cashews and Dates

Ingredients

  • 2 cups raw cashews
  • 2 cups pitted Medjool dates
  • ¼ teaspoon salt
  • cup cocoa powder
  • ½ teaspoon vanilla extract
  • ¼ cup mini chocolate chips plus a little extra for good measure ; )

Instructions

  • Add the cashews to a food processor and pulse until they resemble a coarse flour.
  • Add the pitted dates and process for about 45 seconds, or until the mixture begins coming together into a thick dough.
  • Add the salt, vanilla extract, and cocoa powder. Process for about 30 seconds, or until a thick, shapeable dough forms. Add the mini chocolate chips and process for another 10 seconds to combine.
  • Line a large 4 × 13 inch Pullman loaf pan or another loaf pan with parchment paper. Press the dough firmly and evenly into the pan.
  • Freeze for 30 minutes. Lift the chilled dough from the pan and cut it into your desired bite size. Store in an airtight container in the freezer and enjoy cold.

Notes

  • If using Deglet Noor dates, soak them in hot water for 10 minutes and drain them thoroughly before adding them to the food processor.
  • If your Medjool dates feel unusually firm or dry, you can soak them as well.
  • Press the dough firmly into the pan so the bites hold together when cut.
  • Store the brownie bites in an airtight container in the freezer for up to 3 months.
