These chocolate pecan crumble snack bars are a no bake freezer treat made with oats pecans dates and a rich chocolate coconut oil topping. An easy nourishing snack for sweet cravings.

Ingredients

Base

  • 1 cup rolled oats
  • cups pecans
  • ¼ cup ground flax meal
  • 9 whole pitted Medjool dates
  • ½ cup melted coconut oil
  • ¼ teaspoon pure almond extract
  • Pinch of sea salt

Chocolate Filling

  • ¼ cup melted coconut oil
  • ½ cup cocoa powder
  • ¼ cup honey

Instructions

  • Add the rolled oats and pecans to a food processor, and pulse for about 30 seconds until lightly chopped.
  • Add the dates, melted coconut oil, almond extract, flax meal, and salt. Process until the mixture is well combined and forms a crumbly dough.
  • Line a 9x5 inch loaf pan with parchment paper. Reserve 1 cup of the mixture, then press the remaining dough firmly into the pan to form the base.
  • In a bowl, whisk together the melted coconut oil, cocoa powder, and honey until smooth. The mixture should be thick but still pourable.
  • Pour the chocolate mixture over the base, spreading it evenly. Sprinkle the reserved crumbles on top and finish with flaky sea salt.
  • Freeze for at least 2 hours, or until fully set. Slice into bars and store in an airtight container in the freezer.
