4lbsyellow potatoes
1/4cup cup kosher salt for the cooking water
1 5.3ozpackage garlic and herb Boursin cheese
1/2cupfinely shredded parmesan
1/3cupsour cream
1cupwhole milk
8tablespoonsbutter cut into half inch pieces
1tspsalt add more to taste
Freshly cracked black pepper to taste
Instructions
Peel and cut potatoes into 2 inch chunks, bring to a boil in salted water and then lower the heat and simmer until fork tender, about 25 minutes.
Drain potatoes and return to the pot, mashing over low heat for a few minutes
