Ingredients

  • 4 lbs yellow potatoes
  • 1/4 cup cup kosher salt for the cooking water
  • 1 5.3 oz package garlic and herb Boursin cheese
  • 1/2 cup finely shredded parmesan
  • 1/3 cup sour cream
  • 1 cup whole milk
  • 8 tablespoons butter cut into half inch pieces
  • 1 tsp salt add more to taste
  • Freshly cracked black pepper to taste

Instructions

  • Peel and cut potatoes into 2 inch chunks, bring to a boil in salted water and then lower the heat and simmer until fork tender, about 25 minutes.
  • Drain potatoes and return to the pot, mashing over low heat for a few minutes
  • Add butter and mash until mostly melted
  • Crumble in Boursin and gently mash to combine
  • Add milk and stir until smooth
  • Fold in sour cream and parmesan
  • Season with salt and pepper and serve warm
