Instructions
Preheat the oven to 350°F and spread the peanuts on a baking sheet. Roast for 10 minutes to deepen the flavor, then let them cool slightly.
Add the roasted peanuts to a food processor with 2 teaspoons of honey. Blend on high, pausing to scrape down the sides as needed.
When the mixture looks crumbly, add the coconut oil and remaining teaspoon of honey. Continue blending until smooth and creamy. This may take a few minutes depending on your food processor.
Taste and adjust the sweetness or salt to your preference. If using unsalted peanuts, add ½ teaspoon of salt to balance the flavor.
Transfer the peanut butter to a jar with a lid and store it in the refrigerator for up to three weeks.
