Equipment

  • 1 Food Processor

Ingredients

  • 3 cups roasted salted peanuts
  • 3 teaspoons honey
  • 1 teaspoon coconut oil optional for smoother texture

Instructions

  • Preheat the oven to 350°F and spread the peanuts on a baking sheet. Roast for 10 minutes to deepen the flavor, then let them cool slightly.
  • Add the roasted peanuts to a food processor with 2 teaspoons of honey. Blend on high, pausing to scrape down the sides as needed.
  • When the mixture looks crumbly, add the coconut oil and remaining teaspoon of honey. Continue blending until smooth and creamy. This may take a few minutes depending on your food processor.
  • Taste and adjust the sweetness or salt to your preference. If using unsalted peanuts, add ½ teaspoon of salt to balance the flavor.
  • Transfer the peanut butter to a jar with a lid and store it in the refrigerator for up to three weeks.
