½ cup 125g avocado oil ¼ cup 60g white sugar ¾ cup 150g brown sugar ¼ cup 65g milk or almond milk 1 egg 1 tsp vanilla extract (or vanilla bean paste) 1 cup 135g all-purpose flour (or sub 1-for-1 gluten free flour) 2 cups 180g old-fashioned oats ¼ cup 25g flaxseed meal ¼ cup 50g brewer’s yeast (de-bittered) 1 tsp 7g baking soda ¾ tsp 7g salt 1 cup 200g chocolate chips
Add avocado oil and both sugars to a glass bowl and mix until sugar is dissolved.
Stir in milk and vanilla. Mix in egg.
Add the dry ingredients: flour, oats, flaxmeal, brewer’s yeast, baking soda, and salt. Mix until combined.
Fold in the chocolate chips.
Line a 9x9-inch glass baking dish with parchment paper and press the mixture evenly into the pan.
Bake at 350°F (175°C) for 10–15 minutes until the top looks lightly golden.
Let cool completely in the fridge until it is set before slicing into 12 bars.
