Ingredients

  • ½ cup 125g avocado oil
  • ¼ cup 60g white sugar
  • ¾ cup 150g brown sugar
  • ¼ cup 65g milk or almond milk
  • 1 egg
  • 1 tsp vanilla extract (or vanilla bean paste)
  • 1 cup 135g all-purpose flour (or sub 1-for-1 gluten free flour)
  • 2 cups 180g old-fashioned oats
  • ¼ cup 25g flaxseed meal
  • ¼ cup 50g brewer’s yeast (de-bittered)
  • 1 tsp 7g baking soda
  • ¾ tsp 7g salt
  • 1 cup 200g chocolate chips

Instructions

  • Add avocado oil and both sugars to a glass bowl and mix until sugar is dissolved.
  • Stir in milk and vanilla. Mix in egg.
  • Add the dry ingredients: flour, oats, flaxmeal, brewer’s yeast, baking soda, and salt. Mix until combined.
  • Fold in the chocolate chips.
  • Line a 9x9-inch glass baking dish with parchment paper and press the mixture evenly into the pan.
  • Bake at 350°F (175°C) for 10–15 minutes until the top looks lightly golden.
  • Let cool completely in the fridge until it is set before slicing into 12 bars.
