Fudgy Date Nut Snack Bars

These fudgy date nut snack bars are naturally sweetened with Medjool dates and made with cocoa, nuts, and nut butter for a rich no bake treat that is simple, wholesome, and perfect for meal prep.

Ingredients

  • 1 ½ cups packed Medjool dates pitted
  • 1 cup walnuts
  • 1 cup pecans
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • ¼ teaspoon sea salt
  • 1/3 cup semi-sweet chocolate chips

Instructions

  • Pulse nuts in a food processor until finely chopped. Be careful to not overprocess the nuts as it released the oils.
  • Add dates and process until combined.
  • Add cocoa powder, vanilla, and salt. Blend until a thick dough forms.
  • Add in 1/3 cup semi sweet chocolate cips and pulse for 10-15 seconds to break them up into smaller pieces.
  • Press firmly into a parchment lined pan. It helps to fold the parchment paper over the dough and press firmly with the bottom of a measuring cup or your hands.
  • Freeze for 1 hour before slicing into bars.
  • Store these in the freezer and enjoy whenever the craving hits!
