Place all ingredients in the food processor except the chocolate chips. Pulse until it starts to blend and incorporate. Then process steadily until it begins to turn into a dough. Be careful not to over-process as the oils will begin to release from the nuts.
Add the chocolate chips and pulse + process a few more times until they are just incorporated.
Place this dough into a parchment lined loaf pan. Fold parchment paper over the dough and press down to flatten and compress the bars. Place in the freezer for 1 hour before cutting. Store in the freezer.
