Ingredients

  • 1 top bottom, or eye round roast (2–3 lbs)
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  • Preheat the oven to 425°F. If using the Typhur Countertop Oven, lower the temperature to about 410°F.
  • Pat the roast dry and season it well on all sides with salt and pepper.
  • Roast for 15 minutes to create a golden crust.
  • Reduce the oven temperature to 325°F and continue cooking for about 1 hour, or until the internal temperature reaches 125°F for rare to medium-rare. Use the Typhur meat probe or an instant-read thermometer to check.
  • Remove from the oven, cover with foil, and let rest for 15 minutes.
  • Slice thinly with a sharp chef’s knife.
  • Store in airtight containers in the refrigerator for up to 5 days.
