This creamy green dressing combines Greek yogurt, avocado, cilantro, parsley, and lime for a fresh sauce that tastes delicious on tacos, salads, chicken, and roasted vegetables.

Ingredients

  • ¼ cup sour cream
  • ¼ cup plain Greek yogurt
  • 1 small handful fresh cilantro stems included
  • 1 small handful fresh parsley leaves only
  • 2 green onions white portions removed
  • Juice of ½ lime
  • 1 teaspoon white vinegar
  • ¾ teaspoon fine salt
  • ½ teaspoon cumin
  • 1 clove garlic
  • ¼ avocado
  • 1 tablespoon olive oil
  • ½ cup water plus more as needed

Instructions

  • Add the sour cream, Greek yogurt, cilantro, parsley, green onions, lime juice, white vinegar, salt, cumin, garlic, avocado, olive oil, and water to a blender or tall jar.
  • Blend with a traditional blender or immersion blender until smooth and creamy.
  • Check the consistency and add another splash of water if you would like a thinner dressing.
  • Taste and add more salt or lime juice as needed. Serve immediately or refrigerate until ready to use.

Notes

  • Store the dressing in an airtight container in the refrigerator for up to four days. Some darkening is normal because it contains fresh avocado.
  • Use this dressing on salads, chicken tacos, taco bowls, roasted vegetables, grilled meat, crispy potatoes, or kale slaw.
