Ingredients

  • 3 medium sweet potatoes cut into ¼-inch thick fries
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 tablespoon arrowroot starch
  • Optional: ½ teaspoon garlic powder and ½ teaspoon paprika for extra flavor

Instructions

  • Preheat your oven to 415°F and line a large baking sheet with parchment paper.
  • Peel and cut the sweet potatoes into even ¼-inch fries. The more uniform they are, the better they’ll cook.
  • Toss the fries in a large bowl with olive oil, salt, starch, and any optional seasonings until evenly coated. The starch helps create that light, crisp texture on the outside.
  • Spread them out evenly on the baking sheet in a single layer—avoid overcrowding so they roast instead of steam.
  • Bake for 30 minutes, flipping halfway through.
  • Finish under the broiler for a few minutes until the fries reach the level of crispiness you like. Keep a close eye on them during this step so they don’t burn.
  • Serve warm with burgers, grilled chicken, or your favorite dipping sauce!
