Peanut butter banana baked oatmeal is an easy make ahead breakfast or snack made with ripe bananas, Greek yogurt, peanut butter, rolled oats, and chocolate chips.

Ingredients

  • 5 overripe bananas divided
  • 2 large eggs
  • 1 1/4 cups whole milk
  • 1 cup plain Greek yogurt
  • 3/4 cup creamy peanut butter
  • 1/3 cup maple syrup
  • 2 teaspoons vanilla extract
  • 3 cups rolled oats
  • 2 teaspoons cinnamon
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup chocolate chips, divided
  • 2 tablespoons chia seeds or ground flaxseed meal optional

Instructions

  • Preheat the oven to 350°F (175°C). Mash 4 bananas in a large mixing bowl. Add the eggs, milk, Greek yogurt, peanut butter, maple syrup, and vanilla. Whisk until well combined.
  • Stir in the rolled oats, cinnamon, baking powder, salt, and optional chia seeds or flaxseed meal. Fold in 3/4 cup of the chocolate chips.
  • Crumple a sheet of parchment paper and fit it into a 9x13 inch baking dish. Lightly grease the parchment and exposed sides of the pan. Pour in the oatmeal mixture and spread evenly.
  • Slice the remaining banana and arrange it over the oatmeal. Sprinkle the remaining 1/4 cup chocolate chips over the top.
  • Bake for 40 to 45 minutes, or until completely set in the center. Let cool almost completely before cutting into bars or squares. Serve warm or at room temperature with a dollop of Greek yogurt.

Notes

Store leftovers covered in the refrigerator. Warm individual portions in the microwave before serving. I especially love this warm with a little Greek yogurt on top.
