Soft, chewy peanut butter oat protein bites made with simple pantry staples. These no bake bites are easy to prep ahead and make a filling snack with extra protein.

Ingredients

  • 1 1/4 cups old fashioned oats
  • 1/2 cup creamy peanut butter
  • 3 tbsp vanilla protein powder
  • 2 tbsp chia seeds
  • 2 tbsp ground flax meal
  • 1/4 cup maple syrup
  • 1/2 tsp vanilla extract or vanilla bean paste
  • 1/4 tsp salt
  • 1/4 cup mini chocolate chips optional

Instructions

  • Add the oats, protein powder, flax, chia, and salt to a large mixing bowl. Stir to combine.
  • Add the peanut butter, honey, and vanilla extract. Mix until everything is evenly combined.
  • Fold in the chocolate chips.
  • Roll into bite sized balls using about 1 tablespoon of mixture per bite.
  • Transfer to the fridge and chill for about 20 minutes, or until firm.
  • Store in an airtight container in the refrigerator or freezer.
