Enough to generously drizzle 3 to 4 bowls
Roasted Sweet Potatoes
3large sweet potatoescut into a large dice
2tablespoonsolive oil
1 1/2teaspoonssalt
1teaspoongarlic powder
1teaspoononion powder
Black pepperto taste
Green Beans
1lbFresh green beans
1/4cupsaltfor the boiling water
Salmon
1large skin on salmon filletabout 1 1/2 to 2lbs of salmon
1 to 2teaspoonssalt
1/2teaspoonblack pepper
Olive oil
Instructions
Roast the Sweet Potatoes
Preheat the oven to 425 degrees
Toss sweet potatoes with olive oil, salt, garlic powder, onion powder, and pepper
Spread on a baking sheet in an even layer
Roast for about 30 minutes, flipping halfway, until tender and golden
Cook the Green Beans
Bring a large pot of water to a boil and season with salt
Add green beans and boil for 5 minutes
Transfer immediately to ice water to stop the cooking and keep them bright green
Cook the Salmon
Preheat the broiler
Place salmon skin side down on a foil lined sheet pan
Season with salt, pepper, and olive oil
Broil for about 10 minutes, until the salmon flakes easily
