Salmon Nourish Bowls with Creamy Avocado Caesar

Ingredients

Creamy Avocado Caesar Dressing

  • About 3/4 to 1 cup prepared of my Avocado Caesar dressing see link above
  • Enough to generously drizzle 3 to 4 bowls

Roasted Sweet Potatoes

  • 3 large sweet potatoes cut into a large dice
  • 2 tablespoons olive oil
  • 1 1/2 teaspoons salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Black pepper to taste

Green Beans

  • 1 lb Fresh green beans
  • 1/4 cup salt for the boiling water

Salmon

  • 1 large skin on salmon fillet about 1 1/2 to 2lbs of salmon
  • 1 to 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • Olive oil

Instructions

Roast the Sweet Potatoes

  • Preheat the oven to 425 degrees
  • Toss sweet potatoes with olive oil, salt, garlic powder, onion powder, and pepper
  • Spread on a baking sheet in an even layer
  • Roast for about 30 minutes, flipping halfway, until tender and golden

Cook the Green Beans

  • Bring a large pot of water to a boil and season with salt
  • Add green beans and boil for 5 minutes
  • Transfer immediately to ice water to stop the cooking and keep them bright green

Cook the Salmon

  • Preheat the broiler
  • Place salmon skin side down on a foil lined sheet pan
  • Season with salt, pepper, and olive oil
  • Broil for about 10 minutes, until the salmon flakes easily

Assemble the Bowls

  • Add sweet potatoes and green beans to each bowl
  • Top with a piece of salmon and cherry tomatoes
  • Drizzle generously with avocado Caesar dressing
  • Finish with extra parmesan if desired
