Ingredients

For the Tacos

  • 1 prepared batch Smoky Citrus Chicken
  • 8 to 10 tortillas store bought or homemade
  • Thinly shredded green or red cabbage
  • Frozen corn thawed

For the Avocado Cream

  • 1 avocado
  • ¼ cup sour cream about 60 grams
  • ¼ cup fresh cilantro
  • Squeeze of fresh lime juice
  • ½ teaspoon salt
  • ¼ cup water plus more as needed

Instructions

  • Prepare the Smoky Citrus Chicken according to the recipe.
  • Combine the avocado, sour cream, cilantro, lime juice, salt, and water in a tall container. Blend with an immersion blender until completely smooth. Add more water as needed to reach your desired consistency.
  • Mix the thawed corn with a small amount of avocado cream, using just enough to lightly coat it.
  • Warm the tortillas and fill each one with smoky citrus chicken, shredded cabbage, and creamy corn.
  • Finish with additional avocado cream and serve immediately.

Notes

  • The chicken can be prepared ahead of time and reheated before assembling the tacos.
  • Store the avocado cream in a covered container in the refrigerator for up to 2 days. Press plastic wrap directly against the surface to help slow down browning.
