Thinly shredded green or red cabbage
Frozen cornthawed
For the Avocado Cream
1avocado
¼cupsour creamabout 60 grams
¼cupfresh cilantro
Squeeze of fresh lime juice
½teaspoonsalt
¼cupwaterplus more as needed
Instructions
Prepare the Smoky Citrus Chicken according to the recipe.
Combine the avocado, sour cream, cilantro, lime juice, salt, and water in a tall container. Blend with an immersion blender until completely smooth. Add more water as needed to reach your desired consistency.
Mix the thawed corn with a small amount of avocado cream, using just enough to lightly coat it.
Warm the tortillas and fill each one with smoky citrus chicken, shredded cabbage, and creamy corn.
Finish with additional avocado cream and serve immediately.
