Ingredients

  • 1 cup crunchy natural peanut butter
  • ½ cup honey
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 2 cups rolled oats
  • ½ cup crisp rice cereal
  • ¼ cup ground flaxseed (I grind 1/4 cup flax seed myself) or flaxseed meal
  • ¼ cup mini chocolate chips

Instructions

  • Add the peanut butter, honey, vanilla extract, and salt to a large mixing bowl. Stir until smooth and completely combined.
  • Mix in the rolled oats until thoroughly coated. Gently fold in the crisp rice cereal, flaxseed meal, and mini chocolate chips.
  • Line two 9 × 4 inch loaf pans with parchment paper. Divide the mixture evenly between the pans. Fold the parchment over the mixture and press down very firmly to compact it.
  • Freeze for 30 minutes. Lift the chilled mixture from the pans and cut each portion into 6 bars. Store in an airtight container in the refrigerator or freezer.

Notes

  • Natural peanut butter can vary in consistency. Stir it thoroughly before measuring so the oils are completely incorporated.
  • Press the mixture into the pans as firmly as possible. This helps the bars hold together when sliced.
  • For peanut allergies or nut free schools, replace the peanut butter with sunflower seed butter.
  • We like to place the bars in lunchboxes straight from the refrigerator or freezer. They will soften as they sit.
  • Store in the refrigerator for up to 2 weeks or freeze for up to 3 months.
