Spicy & Turkey and Lentil Sloppy Joes

A hearty, freezer friendly turkey sloppy joe made with ground turkey and lentils in a flavorful tomato based sauce. This easy make ahead meal is perfect for busy weeknights and reheats beautifully straight from the freezer.

Ingredients

Spice Mix

  • This spice mix can be made ahead and stored in a jar. It makes enough for a large batch.
  • 2 tbsp onion powder
  • 2 tbsp garlic powder
  • 1 1/2 tbsp smoked paprika
  • 1 tbsp dried basil
  • 1 tbsp dried oregano
  • 1 tbsp salt
  • 2 tsp black pepper
  • 1 tsp celery seed
  • 1/4 tsp cayenne pepper leave this out if you don't like spice!

Sloppy Joe Mixture

  • 3 pounds ground turkey
  • 2 large onions chopped
  • 2 15oz cans tomato sauce
  • 1 lb package of lentils cooked
  • 1-2 tbsp Brown sugar to taste

Instructions

  • Cook the lentils according to package directions until tender, then drain and set aside
  • In a large skillet or Dutch oven, brown the ground turkey over medium heat
  • Add the chopped onions and cook until softened
  • Stir in the tomato sauce and prepared spice mix
  • Simmer for about 15 to 20 minutes, stirring occasionally
  • Add the cooked lentils and stir until evenly combined
  • Taste and add brown sugar as needed to balance the flavors
  • Let the mixture simmer for a few more minutes, then remove from heat
  • Allow to cool completely before portioning into freezer safe bags or containers
