2 ½ cups old-fashioned oats 2 cups mixed nuts and seeds almonds, sunflower seeds, flax seeds, etc. 1 ½ tsp salt 1 tsp cinnamon 1/2 tsp ground cardamon ½ cup olive oil ½ cup pure maple syrup 1 tsp vanilla extract 1 egg white
Preheat oven to 300–325°F.
In a large bowl, mix oats, nuts, seeds, salt, and cinnamon.
In a smaller bowl, whisk together olive oil, maple syrup, vanilla, and egg white.
Pour the wet mixture over the dry ingredients and stir until evenly coated.
Spread onto a parchment-lined baking sheet, pressing down gently to help form clusters.
Bake for 15 minutes, flip gently, then bake another 10–15 minutes until golden brown. Watch closely near the end to avoid burning.
Let cool completely before breaking into clusters. Store in an airtight container.
