These easy weeknight quesadillas are filled with braised beef, beans, rice, melty cheese, and served with creamy jalapeño ranch for the perfect quick dinner.

Ingredients

  • 8 tortillas
  • 2 cups shredded braised beef
  • 1 cup cooked rice
  • 1 cup pinto beans drained and rinsed
  • 2 cups shredded cheese
  • Fresh cilantro chopped
  • Jalapeño ranch for serving
  • olive oil for cooking

Instructions

  • Warm the shredded beef, rice, and beans in a skillet over medium heat until heated through.
  • Heat a large skillet or griddle over medium heat.
  • Place one tortilla in the skillet and sprinkle cheese over one half.
  • Add some beef, rice, beans, and a spoonful of sour cream.
  • Top with more cheese and fold the tortilla over.
  • Cook until golden brown and crispy on both sides and the cheese is melted.
  • Repeat with the remaining tortillas and filling.
  • Serve warm with fresh cilantro and plenty of jalapeño ranch for dipping.
