These peanut butter protein bites are one of those snacks I always like to keep in the fridge for busy afternoons. They take just a few minutes to mix together, they’re packed with protein and healthy fats, and my kids get excited whenever they see me whipping up a batch. They taste a little like a homemade Reese’s bite straight from the fridge, but a healthier and more filling snack. I love having something ready to grab that actually keeps everyone full for more than five minutes.

Why I Love It

I make these all the time because they require zero baking, use simple pantry ingredients, and store really well in the refrigerator. They’re sweet enough to feel like a treat, but they’re made with ingredients that actually help hold my kids over between meals.

Everything gets thrown together in one bowl and are super quick and easy to whip up. I also love how flexible they are. If the mixture feels too dry, you can add a little more peanut butter. If it feels too wet, a few extra oats or chia seeds fix it instantly.

Main Ingredients & Swaps

  • Old fashioned oats – gives the bites some texture and makes them filling
  • Natural creamy peanut butter – helps bind everything together and adds protein and healthy fats
  • Maple syrup – lightly sweetens the bites, you can swap this out for honey as well
  • Chia seeds – helps absorb moisture and keeps the bites firm (and a boost of fiber!)
  • Ground Flax Seed – to bump up the nutrients and adds a nice texture.
  • Vanilla protein powder – The added protein helps balance out these balls and keep my kids full longer. This is my favorite vanilla protein powder flavor.
  • Vanilla bean paste or vanilla extract – a paste takes these to the next level, but vanilla extract works just fine as well
  • Mini chocolate chips – gives that chocolate peanut butter cup flavor my kids love.

How I Make It

In a medium bowl, combine the oats, flax, peanut butter, maple syrup, chia seeds, protein powder, vanilla, and mini chocolate chips.

Mix everything together until fully combined. The mixture should hold together easily when pressed between your hands.

If the mixture feels too wet, add a little more oats or chia or flax. If it feels too dry, add another spoonful of peanut butter.

Using a small cookie scoop or spoon, press the mixture firmly and roll into bite sized balls.

Transfer to a container and refrigerate until firm about an hour. These taste best cold straight from the fridge.

Ingredients
  

  • 1 1/4 cups old fashioned oats
  • 1/2 cup creamy peanut butter
  • 3 tbsp vanilla protein powder
  • 2 tbsp chia seeds
  • 2 tbsp ground flax meal
  • 1/4 cup maple syrup
  • 1/2 tsp vanilla extract or vanilla bean paste
  • 1/4 tsp salt
  • 1/4 cup mini chocolate chips optional

Method
 

  1. Add the oats, protein powder, flax, chia, and salt to a large mixing bowl. Stir to combine.
  2. Add the peanut butter, honey, and vanilla extract. Mix until everything is evenly combined.
  3. Fold in the chocolate chips.
  4. Roll into bite sized balls using about 1 tablespoon of mixture per bite.
  5. Transfer to the fridge and chill for about 20 minutes, or until firm.
  6. Store in an airtight container in the refrigerator or freezer.
