Herb Garden Dressing
My new summer staple. A bright and earthy salad dressing perfect for all your summer salads! Using loads of herbs from my herb garden and packed with nutrients and healthy fats.

This recipe came together on Mother’s Day. I had just spent a couple of hours working outside in the garden on a beautiful Sunday when I noticed all of my herbs were flourishing and I didn’t have any recipe in mind yet to use them for! So in order to not miss this golden opportunity to cook with fresh herbs, I decided just to snip something from everything and blend it up into an herb garden dressing. I poured it on top of a big, herby, kale salad. I loved how this turned out so much that I decided I needed to get this written up for the blog.

Ingredients for Herb Garden Dressing
For this Herb Garden Dressing, you will first want an herb garden. Lol. But really, it makes much more sense to grow your own herbs. Cheap, easy, and super fresh and flavorful.
I used a blend of parsley, rosemary, sage, english thyme, italian basil and pesto basil. I also added in some fresh garlic, salt and pepper, dijon mustard, fresh lemon juice, maple syrup, balsamic vinegar and a high quality olive oil.
This went perfect with my sister’s favorite and go-to kale salad. We love this salad because of the healthy benefits but also it’s super fresh and flavorful! I love to eat a big bowl of this kale salad for lunch with a piece of sourdough toast! In fact I just finished scarfing one down as I write this blog.

Method
- Add all the washed and prepped herbs into the blender along with the water, and everything except the olive oil. Blend until most of the herbs are incorporated and there are no large pieces. Next slowly drizzle in the 1/2 cup olive oil as the blender or food processor is running until it emulsifies into a rich green dressing.
