Herb Garden Dressing

My new summer staple. A bright and earthy salad dressing perfect for all your summer salads! Using loads of herbs from my herb garden and packed with nutrients and healthy fats.

Equipment

  • 1 blender or food processor A good immersion blender might also work

Ingredients

  • 1/4 cup packed parsley leaves
  • 1 large sprig of fresh rosemary, leaves only
  • 1/4 cup english thyme, washed, woody parts removed
  • 1/2 cup packed italian basil
  • 1/4 cup packed pesto basil you can use one variety of basil but I have two growing in my garden
  • 1 large sage leaf
  • 1/4 cup water, for help with the initial blending of herbs
  • 1 tbsp dijon mustard
  • Juice of 2 lemons
  • 2 tbsp balsamic vinegar
  • 1-2 tsp maple syrup
  • 1/2 tsp salt
  • 1/2 tsp fresh cracked pepper
  • 1 clove garlic
  • 1/2 cup olive oil drizzle this in last while blender is running

Instructions

  • Add all the washed and prepped herbs into the blender along with the water, and everything except the olive oil. Blend until most of the herbs are incorporated and there are no large pieces. Next slowly drizzle in the 1/2 cup olive oil as the blender or food processor is running until it emulsifies into a rich green dressing.
